We are looking for experienced Chefs to join the team as a Chef de Partie, mainly based in Twr y Felin Hotel, although there may be occasions when you need to support at our sister properties.

Your duties will be:

  • To support the Head Chef and Sous Chef in the smooth and efficient running of the kitchen.
  • To implement, train and maintain the standards set with the guidance of the Head and Sous Chef.
  • To ensure that all food is prepared, stored and disposed of to the standard required.
  • To control stock levels, and ensure that all food to is used appropriately at all times.
  • You will be expected to help support and develop the team and to help with the development of the menu and suggest dishes
  • You should be able to liaise and communicate with other departments within the hotel to ensure that the guest’s comfort and wellbeing is ensured.

The salary for this position is £21,000, however this is negotiable dependant on experience.

Working with the Operations Manager, it will be your responsibility to run the daily operation of the Food and Beverage for Twr Y Felin Hotel, Roch Castle and Penrhiw Priory. You will inspire your team to deliver a consistently high level of guest service within the department whilst maximising sales opportunities for the hotels.

Basic dutes include:

  • Supervise the daily operations in the food and beverage areas and anticipate guests’ needs, wherever possible, in order to deliver exceptional quality of service and, in turn, guest satisfaction and inspire your team to do the same.
  • Develop the F&B Team through guidance and training.
  • Support and maintain a good working relationship with the kitchen brigade and other departments within the hotel to deliver an exceptional experience for our guests.
  • Constantly order appropriate wine and honesty bar stocks depending on the time of year, while constantly improving the content in each of the three venues.
  • Visit Penrhiw Priory and Roch Castle, on at least a weekly basis, to oversee breakfast content and service standards.
  • Conduct accurate and timely stock takes of wine, beverages, crockery and cutlery at Twr y Felin y Felin, Penrhiw Priory and Roch Castle on at least a monthly basis
  • Oversee breakfast, lunch and dinner services at Twr y Felin Hotel on at least a weekly basis, to ensure that service levels are maintained.  
  • Monitor sales, budgets and standards of upselling along with cashing up and reconciling end of day reports. (It is the responsibility of the F&B Team to ensure that all tills balance at the end of the night before they leave)

Salary for this position is £27,000 - £30,000, negoatioable subject to previous experience.
